Fried Liver & Lolli Attacks
1.e4 e5 2.Nf3 Nc6 3.Bc4 Nf6 4.Ng5 d5 5.exd5 Nxd5. In the Fried Liver, White sacrifices the knight on f7 to drag Black's king into the open. The Lolli, 6.d4, is the more solid version, opening the centre before sacrificing.
The idea
After 1.e4 e5 2.Nf3 Nc6 3.Bc4 Nf6 4.Ng5 d5 5.exd5 Nxd5 White sacrifices the knight with 6.Nxf7 (the Fried Liver) or plays 6.d4 (the Lolli). In the Fried Liver the king is dragged to e6 after 6…Kxf7 7.Qf3+ Ke6 8.Nc3, and White attacks the pinned knight on d5 with everything. The Lolli keeps the sacrifice for a move later, often with even better effect.
What happens next
White's attack is about the d5 knight and the king on e6: Nc3, O-O, Re1 and d4 all come with threats. Black's king has to walk, and most lines end in mate or heavy material loss if Black doesn't know the defence.
How to play against it
The real defence is not to allow it: 5…Na5 (the Polerio), 5…Nd4 (the Fritz) or 5…b5 (the Ulvestad) instead of 5…Nxd5. If you do take on d5, after 6.Nxf7 Kxf7 7.Qf3+ Ke6 8.Nc3 Ncb4! is the only move, and then …c6 to hold d5. The Lolli with 6.d4 is harder to meet, which is why 5…Na5 is recommended.
